Making dinner in a slower cooker is one of my favorite ways to cook! It's just so easy and you don't have to worry about what's for dinner when 5:30 pm comes around since it's already decided! Sometimes I have great intentions for cooking with the slow cooker (meat defrosted, we have all the ingredients...), but then I actually forget to put everything in the cooker in enough time for it to be ready for dinner! I was so proud of myself...a few days ago I got out a roast to defrost, last night I actually put the slow cooker on the kitchen counter so I wouldn't forget when I got up and this morning I threw it all in! Yay!!! Anyways, here's what we are having for dinner tonight...
French Dip Sandwiches. It's super easy! I also love slow cooker recipes that you can just dump all the ingredients in, turn it on and walk away! This is one of those recipes! I got this recipe originally from
http://www.allrecipes.com/. I modified it a bit...like using a can of beef broth rather than using a beef bouillon cube and water. The recipe is cut down as well and serves 4. We are a small family of 3 and I usually have to cut most recipes down. We always have leftovers for the next day or I turn it into beef and noodles with those great Amish noodles for Lee Lee! The original recipe doesn't call for cheese, but we love it! Use your favorite cheese...I put provolone in the recipe, but tonight we are using mozzarella because that's what we have!
I think I forgot to say ( if you don't already know me)...I live with 2 very picky eaters and they love this meal. Sometimes we serve it with chips, but tonight it will either be homemade mac & cheese (since I have leftover noodles from last night's dinner) or oven roasted potatoes!
